Baked Chicken Nuggets

Forget the fast food version! Make healthier chicken nuggets homemade.

.I admit it, my kids love fast food chicken nuggets.  I'm not ashamed to share that.  I try not to indulge in the whole fast food thing too much, but, some days, it's tough. When we are out running around or going to a homeschool class that is a distance away, stopping somewhere is just more convenient. I know, it's not very healthy and heck, it's expensive for us.  This is a much better alternative.

These are a family favorite here. Baked, not fried and not take out.  All is good with these. Quick and delicious!


Baked Chicken Nuggets

Ingredients
  • 1 1/4 lbs chicken breast/cut into cubes
  • 1 TBSP canola oil
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 TBSP dry Italian seasoning
Instructions
Preheat oven to 425 degrees. Spray baking sheets with canola spray
Mix breadcrumbs,grated cheese and seasoning in a bowl.
Coat each chicken cube with canola oil. Then, coat with breadcrumb mixture.
Put chicken on baking sheet and spray lightly with canola spray.
Bake 8-10 minutes, then, turn chicken over and cook an additional 5 minutes or until cooked through.
