Broiler Nachos

One pan, 20 minutes and your fun, simple dinner is ready to go.


Nachos are a pretty simple recipe for just about anyone.

Get some chips, some cheese and toss in the microwave or oven. That works good, but, the conventional oven can take some time. The microwave is quick, but, let's face it, they don't always turn out that great. Soggy, bendy, chips are the worst. 😢

A great alternative is using your broiler. It's super quick and the chips turn out nice and crispy.  I use this method a ton. Lunch, snacks and even dinner.

You start out with a large baking sheet, add chips, cooked taco meat and cheese.  Then, a just few minutes under your broiler and boom! Done.

Below is about the amount of ingredients I used. Honestly, I don't really measure anything when it comes to this dish. So, use your own judgment and hunger level when making. Just be sure to keep a close eye on them once under the broiler. They cook really quick and can burn easily.

Broiler Nachos

Ingredients (Serves: 6-8)
  • 1 lb ground beef ( or turkey or chicken)
  • 1 envelope taco seasoning
  • 12 oz bag tortilla chips
  • 1 cup kernel corn
  • 2 cups taco-blend cheese ( or sharp cheddar or Monterrey jack)
  • desired garnishes ( ex: lettuce, salsa, tomatoes, etc)
Instructions
In a skillet, brown ground beef with taco seasoning until no longer pink. If necessary, drain.
Preheat broiler.
Line a 10-11 inch rimmed baking sheet with foil. Lightly spray foil with non stick cooking spray.
Spread nacho chips out of baking sheet.
Then, spoon on taco meat and corn.
Sprinkle cheese on top.
Cook under preheated broiler. This will only take a few minutes. Keep on eye on them..they cook fast!
Before serving, add garnish as desired ( ex: lettuce, sour cream, salsa, etc)
