Black Bean Brownies

When I first came across this recipe from Skinny Taste, I thought "ugh, that sounds disgusting".  But, I had tried a couple of recipes from the site and loved them.  So, I had faith and took the plunge. 

Oh.My.Goodness...these are darn good. Chewy, chocolaty and just yum, yum, yum.  

You can not..I repeat...can not taste the beans in these. My entire family inhales these and has no clue that there is black beans in them.  Try them! You are in for a surprise.

Oh...and if you run into my 6 year old son...let's keep this recipe between us. This is the closet thing the kid eats to a vegetable right now. :)


Black Bean Brownies

Prep Time: 00:15
Cook Time: 00:30
Ingredients (Serves: 8)
  • 15 oz can of black beans
  • 19 oz box of brownie mix
  • water
Instructions
Open beans and drain and rinse well. Put beans back into can and fill with water. Puree beans/water in blender or food processor.
Mix bean puree with brownie mix.
Pour into a greased 13 x 9 inch pan.
Bake according to the directions on the brownie mix box.

  5. I just made these and they are really good. Have you tried using less water and adding an egg in to make them fluffy? I was also wondering if anyone has tried to boil down spinach in a little water and use the spinach juice in it too? I have a child with food sensory problems so I have a hard time getting him to eat any veggies.

    I haven't heard about the spinach, but it's a great idea! I will have to try that too.

  7. I made these again and put 1 egg in the can along with 1/3cup of spinach juice added beans and filled the rest of the can with water and puree the beans added the mix. They aren't fluffier but now my son, who can detect anything, is getting the nutrients of the spinach and beans! He LOVES them!!!
    To make the spinach juice:
    3 cups of fresh baby spinach in 1 cup water
    Bring to boil
    Then simmer for 10 min
    Strain and press out the juice. Makes 1 cup and it freezes well.
