Chocolate Cookie Sandwiches

I am slowing getting back into the kitchen.  Very slowly.  I am finding that trying to cook or bake during the day, then take pictures is a bit tough with five little people running around all day. The kids are out of school until a few days after New Years, so, it will be until then that I can start posting everyday again.

But, for now, we have cookies.  Chocolate cookies.   Really chocolaty cookies.  If you have a chocolate craving, these will satisfy it.  Quickly.  They are soft and almost melt in your mouth too.

So, make these and gobble them up before your New Year's resolution of no sweets begins.

Chocolate Cookie Sandwiches

Ingredients (10-12 sandwiches)
    • 12 tablespoons, butter, softened
    • 1/4 cup white sugar
    • 1 tsp vanilla
    • 1 cup all purpose flour
    • 3 tbsp cornstarch
    • 1/4 cup cocoa powder
    • 4 oz chocolate chips
    • 2 TBSP heavy cream
    Preheat oven to 350 degrees.
    Mix butter, sugar and vanilla in bowl until well combined.
    Add flour, sugar, cocoa and cornstarch. Beat until combined.
    Spoon approx tablespoons dollops on a baking sheet. Flatten gently.
    Bake 10-12 minutes
    Melt chocolate over low heat, then add in cream. Stir until combined. Let cool. Spread chocolate filling on backside of cooled cookie, then, top off with another cookie, making a sandwich.
    Make sure cookies & filling are completely cooled before frosting them.


    1. Erin, I don't have children left at home, but I have somehow managed to NOT have any time for the kitchen either! These cookies look so fun. I think I should make some for my two little grandsons and then take the rest to work. My grandsons will adore me and the nurses at work will curse me the whole time they are eating these.'s gonna be great!
