Cheesecake Brownies

Double chocolate brownies with a creamy, cheesecake swirled topping.

A large majority of recipes that are in my possession come from my mom. This one included. 

She gave this to me many years ago, but, it took me a good two years before it was made the first time. Not sure why..they are really delicious.



But, you know how it is. Sometimes, you see a recipe that looks really good and you save it.  It sits in a file somewhere and when you are looking for a completely polar opposite recipe, the one you saved so long ago, pops up. That happens to me all the time.  I can't tell you how many sites are saved in my internet favorites with potential recipes. They are also saved on my phone, via the web and photos.  

These brownies are definitely save-worthy, guys.  Whether you print them out, save it on your phone or PC, just save this one.

Double chocolate brownies with a simple, cheesecake topping swirled on top. They are fabulous and completely addicting. You will not be able to eat just one!




Cheesecake Brownies
Prep Time: 15 minutes
Baking Time: 20- minutes
Serves: 6-8

Ingredients:
for brownies:
2 cups chocolate chips, divided
1/2 cup (1 stick) butter
3 eggs
1 cup brown sugar
1 cup flour
1/2 cup unsweetened cocoa powder
1 tsp vanilla
1/4 tsp baking soda
for topping:
1/3 cup sugar
8 oz cream cheese, softened
1 egg
1/2 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees. Grease an 9 x 13 baking dish.
  2. In a saucepan over medium heat, melt butter with 1 cup of chocolate chips until smooth. 
  3. In a mixing bowl, whisk together flour, cocoa powder, and baking soda. Stir in eggs, one at a time, then, sugar and vanilla. Add in melted chocolate/butter and mix until just combined.  Fold in remaining 1 cup of chocolate chips.
  4. Pour evenly into prepared dish.
  5. for topping:
  6. In a bowl, beat cream cheese until smooth.  Add sugar, eggs, and vanilla. Mix until well blended.  
  7. Pour cream cheese mixture over brownies and slice with knife for marble effect.
  8. Bake 20-25 minutes until knife or toothpick comes out clean.
