This is actually pretty healthy...
These muffins may be dome-less, but, they are very good and easy to add your own twist to them.
I went with french vanilla yogurt and dried apples. For a topping, I sprinkled them with brown sugar and rolled oats.
Go with whatever combo you want to make them your own.
Fruit and Yogurt Muffins
Ingredients (12 muffins)
- 1& 1/2 cup flour
- 2/3 cup sugar
- 2 &1/2 tsp baking powder
- 1/3 cup milk
- 3/4 cup yogurt---any flavor you desire
- 2 eggs
- 1/4 cup melted butter
- 1 cup dried fruit..any flavor or mixture you desire
- 1/4 cup flour
- 1/4 cup sugar
- 1/2 cup rolled oats
- 1/2 tsp ground cinnamon
- 3 TBSP soft butter
Preheat oven to 400 degrees.
Grease a 12 count muffin pan or line with cupcake papers.
Whisk together flour, sugar and baking powder in a mixing bowl.
In a separate bowl, combine, eggs, yogurt and milk. Stir wet ingredients into dry ingredients.
Gently stir in melted butter.
Spoon batter into prepared pan.
Combine all topping ingredients and spoon over muffins.
Bake 15-18 minutes or until lightly brown.
