Perfect for breakfast!
Easy, tasty muffins packed with cinnamon chips..
This is one of my favorite, quick-go-to muffin recipes. It's a snap to whip these together for a quick, breakfast. Also, they taste great.
They are a bit different from the norm, as they are packed full of cinnamon chips. Not your average chocolate. A bit of ground cinnamon gives them a little extra kick too. A total family favorite here.
You don't have to use the cinnamon chips, although, highly recommended. This is a really basic muffin batter than you can totally adapt to your own preference. Add or subtract stir ins to your hearts content.
Perfect for a quick breakfast at home or on the go. Freeze great too!
Cinnamon Chip Muffins
- 2 cups flour
- 3 tsp baking powder
- 1/3 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp ground cinnamon
- 4 TBSP canola oil
- 2/3 cup milk
- 1 cup cinnamon chips
- Preheat oven to 400 degrees. Spray 12 count cupcake pan with non stick cooking spray or line with muffin papers.
- In a mixing bowl, mix together sugar and egg. Add in milk, oil and vanilla and mix to combine. Add in flour, baking powder and ground cinnamon until just combined. Don't over mix!
- Scoop batter in prepared muffin pan. Bake for 15-19 minutes or until brown.
