Oatmeal Cinnamon Chip Bars


Chewy bars with the great taste of an oatmeal cookie and loaded with cinnamon chips..

Yay! More cinnamon chips!

Last week, muffins. This week, bars.

When both of these recipes where originally shared in 2012, it was natural to make them in the same time frame.  I had an abundant amount of cinnamon chips and both were delicious and had to be shared.

This time, not much difference. Lots of cinnamon chips and some delicious treats that were begging to be shared one more time.

Here's the interesting thing about these bars...I've made them in the past only a few times. My kids are not huge oatmeal fans and my husband and I wind up eating nearly a whole pan of these.  Well, what a difference time makes with kids and their eating habits. They dove into these and my husband and I didn't get hardly any!  Mmmm...why can't that even happen with their veggies?!

As for the taste of these..yum.  They have all the great flavors of an oatmeal cookie, but, packed into neat little bars ( or big bars, depending how you cut them!)  They are just so very good. If you wish, stir in a cup of raisins to add even more flavor to them.

Be sure to serve them up with a cold glass of milk...they are too good to pass up!

Oatmeal Cinnamon Chip Bars


  • 1 cup ( 2 sticks) butter, softened
  • 1 cup brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • 1 1/2 cups flour
  • 2 1/2 cups old fashion oats
  • 1 cup cinnamon baking chips
  • 1 tsp baking soda


  1. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
  2. In a bowl, whisk together flour, baking soda and ground cinnamon. Set aside.
  3. In a mixing bowl, beat sugars and butter until fluffy. Add in eggs and vanilla. Beat until combined.
  4. Gradually, add in flour mixture and mix until just combined. Stir in oats until well mixed.
  5. Fold in cinnamon chips.
  6. Spread batter into prepared pan. Bake for 20-25 minutes or until brown.
Yield: 12-15 bars
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 20 mins.
Total time: 35 mins.
