Oatmeal Cinnamon Chip Bars

Cinnamon.Oatmeal...mmm...yeah..OK..mm..hi.  I have been sitting here thinking "what is a clever story to explain how I came across this recipe?". The truth is..it's kinda dull.  Kinda boring. I was buying chocolate chips for another dessert and noticed Cinnamon Baking Chips.  I thought...huh, cinnamon baking chips?  Sounds kinda tasty..turned over the bag and noticed  this recipe.  Yum. So, I bought them. Made them.  Mr Plain and I inhaled them by the next day ( kids aren't big oatmeal fans..oh, well..their loss, our gain)  So, that's it.
I know..my life is so darn exciting, it is a shocking that the cover of People Magazine has alluded me for this long.

Honestly..make these...as cookies...bars..whichever you prefer..they are too good to pass up.





{this recipe also called for 3/4 cup raisins.  I didn't have any on hand, so, I omitted them}


Ingredients:
2 sticks butter
1 cup brown sugar
1/3 cup sugar
2 eggs
1 tsp vanilla
1-1/2 cup flour
1 tsp baking soda
2-1/2 cups quick cooking oats
1 cup cinnamon baking chips

Directions:
Preheat oven to 350 degrees.  Spray 9 x13 pan with non stick cooking spray. In a mixing bowl, mix sugars and butter.  Add eggs.  Combine flour and baking soda in a separate bowl.  Add gradually into sugar/butter/egg mixture. Beat until well combined. Stir in oats. Mix well. Fold in cinnamon baking chips.
Pour batter into prepared pan  Baked for 20-25 minutes or until brown.  Cut into bars.
