Whole Wheat Banana Pancakes

Bananas and whole wheat make these delicious pancakes a healthy start to your day.
We have pancakes at least once a week. Not only for breakfast, but, dinner too.  Sometimes, even lunch.

Pancakes are one of the few things that all five of my kids eat without a single complaint. I kid you not. They also help on those days when the pantry and fridge are running low in supplies and take out is not an option.

Of course, they are delicious too.  Let's not forget that!

These pancakes are just one of the delicious pancakes we have pretty frequently.

Pancakes that are packed with bananas, made with whole wheat flour, and have very little sugar and butter in them.  A true family favorite here.

Don't forget to top them off with some homemade syrup and chopped nuts!

Ingredients (12-15 pancakes)
  • 1-1/2 cups whole wheat flour
  • 3 TBSP melted butter
  • 2 TBSP brown sugar
  • 2-1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 small ripe banana
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla
Instructions
In a bowl, whisk flour, baking powder,ground cinnamon and sugar. Set aside.
In a mixing bowl, add in mashed banana, milk, eggs, vanilla and melted butter. Mix well. Add flour mixture into banana mixture and mix until just combined. Don't over-mix. (If you mixture is too thick, thin out with a bit of water.)
Coat a griddle or non stick skillet with canola oil and preheat to medium heat.
Pour approx 1/4 cup batter on heated skillet. Cook until bubbles form and flip over.
Cook approx another 3 minutes. Repeat until batter is gone.

  2. I'm not sure Amanda..probably just keep it Table for 7 to keep it simple for everyone :)
