Chicken Baked Mac n Cheese

I'm not sure which we eat more of at our house: Chicken or Mac n Cheese.  Almost everyone seems to like one or the other, but, honestly, I get a bit tired of the same old stuff.  Don't you? Sometimes? Yep..I knew you did.
Well..here you go then:


Chicken with Mac n Cheese! Oh..lovely. It seems too easy.  Toss on on bread crumbs, butter and a bit more cheese. Yep..this is really good and will get you out of your mac n cheese/chicken rut.




Baked Mac n Cheese with Chicken

Ingredients (Serves: 6)
  • 1 lb boneless chicken breast, cut into 1 in pieces
  • 1 TBSP canola oil
  • 2 cups dry elbow macaroni
  • 3 TBSP butter
  • 3 TBSP flour
  • 2 cups milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt/pepper, to taste preference
  • 1/2 tsp poultry seasoning
  • 2 cups shredded cheddar cheese
  • 1/4 cup cream cheese
FOR TOPPING
  • 2 TBSP butter, melted
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
Instructions
Preheat a skillet with canola oil. Add in chicken pieces. Season with salt, pepper and poultry seasoning.Cook pieces until they are no longer pink. Set chicken aside.
Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
Cook pasta according to box directions. Set aside.
In a saucepan, over medium heat, melt butter. Add in flour and cook for 1-2 minutes.
Add in onion powder and garlic powder.
Slowly stir in milk. Increase milk to light bubble. Reduce and cook for 8-10 minutes until mixture thickens, stirring often.
Stir in cheeses until melted. Mix cheese sauce with cooked elbow macaroni and coat well. Stir in cooked chicken pieces.
Pour into prepared pan.
Prepare topping by mixing ingredients in small bowl. Sprinkle on top of macaroni.
Bake uncovered for 25-30 minutes or until bubbly.
