Chocolate Peanut Butter Oatmeal Muffins

First up and I'm kinda excited about this, (yes, total blog dork here), check out my newly designed Recipe Index and give a category a click.  Yes, you see a list of food. Exciting. But, really exciting part for me if that it's totally automatic!  So, when a new post is live, the recipe automatically gets listed in the proper category based on my labeling system. Pretty nifty, isn't it?

Before, I had to enter each one automatically. Which, wasn't too tough, however, I kinda would forget sometimes or miss stuff.  This way..nothing is missed.  I love it. Let's talk muffins instead.  
We love muffins for breakfast or for a snack at my house. They are easy to make, portable and easy to freeze for future meals. Works great.

These are one of our real favorites.  They have some chocolate, some peanut butter and some oatmeal. They are just pretty darn awesome. A little sweet with a little healthy!

The perfect breakfast combo.




Chocolate Peanut Butter Oatmeal Muffins

Ingredients (12 muffins)
  • 1-3/4 cup boiling water
  • 3/4 cup rolled oats
  • 3 TBSP cocoa powder
  • 3 TBSP canola oil
  • 3/4 cup sugar
  • 1/2 cup cream peanut butter
  • 1 egg
  • 1 tsp vanilla
  • 1-3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips
Instructions
In a mixing bowl, combine cocoa, water and oats. Let sit for 20 minutes
Preheat oven to 350 degrees. Spray cupcake pan with liners or spray with non stick cooking spray.
After 20 minutes is complete, add sugar to oat mixture until well combined. Add, oil, egg ,vanilla and peanut butter. Combine well.
In a separate bowl, whisk flour,baking powder and baking soda. Add flour mixture slowly into wet mixture until combined well. Fold in chocolate chips.
Spoon batter into prepared cupcake pan.
Bake 20-25 minutes or until toothpick comes out clean.
