Frozen potato/cheese pierogis are a regular dinnertime dish at our house. Mr Plain is a big fan of them. I have never made them from scratch, but, we have eaten them fresh from restaurants and our local farmers market. He tells that mine are better. Yes, the frozen ones from the package. To each his own, right? Well, I prefer the fresh, but, until fresh are made in my kitchen, which may not be happening too soon, the frozen will have to do.
This casserole gives regular frozen {or fresh} pierogis a little extra pizazz. It's pierogis, cheese, more cheese and bacon... and isn't everything a little better with cheese and bacon?

Ingredients:
16oz frozen pierogis
2-3 slices cooked bacon,crumbled
1/3 cup cream cheese
1/2 cup chicken broth
1/4-1/2 cup shredded cheddar cheese
chopped green onions, optional
Directions:
Preheat oven to 400 degrees. Lightly spray 13x9 baking dish with non stick cooking spray. Arrange frozen pierogis in dish. In a saucepan, mix cream cheese and chicken broth. Stir frequently until cheese is melted and smooth. Pour melted cream cheese mixture evenly over pierogis. Sprinkle evenly with cheddar cheese. Bake 20-25 minutes until cheese is bubbly and pierogis are warmed through.
Garnish cooked dish with crumbled bacon & chopped green onions

I'll have to try this! I don't usually make baked pasta dishes, but just putting frozen pasta in a dish wouldn't be that bad!

I made this the other night for my husband and I and I followed the recipe completely. We both really loved this dish but I had to bake it in an 8x8 dish because there was not nearly enough Pierogi's to fill the bottom of a 9x13 pan. Not quite sure what happened - has anyone else had this issue??

@Anon743P..I'm so sorry that you had a problem, I haven't heard any similar issues with it. The only thing that I can think of is possibly a size difference with the pierogis? I am glad your family liked them..please let me know if you have any other questions!

ReplyDeleteI wouldn't skip the cream cheese, it adds a creamy texture to the dish. A similar cheese may work, but, I haven't experimented with anything else though..sorry!

DeleteIt may work, you may need to use a bit of broth or water with it to thin it out just a smidgen. The condensed may be too overly thick on its own.

DeleteWondering what I could use instead of the chicken broth, I have a poultry allergy.
ReplyDeleteI haven't tried this recipe (about to make it actually) but I know whenever I am out of chicken broth, a vegitable broth also does the trick, and even though it would change the flavor slightly, you could do a beef. Sounds like the chicken broth is used for thinning out the cream cheese and while adding flavor, could get substituted.

DeleteI did try it and it worked out great! I put onions on the bottom, and then some chicken brests I needed to use up, the perogies on top (frozen) and poured the sauce over and googled some other recipes for the approximate time and put it on high for around 3 hours and a bit - yum!!

DeleteI'm going to be making this tonight. I will alter it a bit. I will be adding in onion and garlic (We are huge fans of onions and garlic) And I will also be adding ham since that is what I have and bacon is so expensive. I got a really good deal on ham at Sam's Club the other day. So now I have 4 ham stakes in my freezer waiting to be used.
