Mashed potatoes is not something we eat alot of around here. My kids are not big fans of them. Weird, right? I thought all kids loved mashed potatoes. Of course, nothing is the norm when it comes to my children's eating habits. This was a bigger hit than our regular, plain mashed potatoes though. I will say it again..bacon and cheese, makes everything a bit better.
This casserole is very creamy, cheesy and would make a great side dish or you could serve as your main course. You could also put it together, cover it and put in the fridge. Then, when you are ready, uncover and bake. It's a great dish to have for a holiday or to bring to a potluck.
8 medium potatoes (approx 2lbs),peeled and cut into chunks
1 cup evaporated milk
1/2 cup sour cream
2 cups shredded cheddar cheese,divided
4-6 slices bacon, cooked and crumbled.
salt/pepper- to taste preference
Directions:
Preheat oven to 350 degrees. Spray 2 qt casserole dish with non stick cooking spray.
Boil potatoes in large pot. Cook approx 20 minutes and drain. Return potatoes to pot. Add evaporated milk, sour cream & salt/pepper. Beat with mixer until smooth. Stir in 1-1/2 cups of cheddar cheese. Spoon potatoes into prepared dish. Bake for 20 minutes. Top with bacon and remaining 1/2 cup cheese. Baked another 5 minutes or until heated thoroughly and cheese is melted.

ReplyDeleteI was laughing when I saw this today because we had this a few nights ago...just one of mom's "experiments" gone right. We wanted baked potatoes, but all we had were a few small potatoes and none good for baking. So, I just made mashed potatoes and added in some "baked potatoe" ingredients and stuck it in the oven. Huge success :)
