{No Bake} Mini Cheesecakes

Fun, mini cheesecakes that require no baking..
These mini cheesecakes are one of our favorite treats to make in the warm weather. Which, is weird. Because, not everyone is my house likes cheesecake.  But, these? They love them.

Adore them.


I'm thinking it's the Oreo cookie at the bottom of them or maybe it's because they are just so darn cute. They are, aren't they?  Fun too. It's the sprinkles.


Perhaps the biggest reason? They are delicious. No question there. Also, easier than anything to make.

All you need for these is literally 5 ingredients and about an hour or so. Technically, you could make these with just 4 ingredients, but, then, your mini cheesecakes are lacking sprinkles. Still delicious, but, a tad less fun. Although, instead of sprinkles, you could sprinkle some crushed up Oreo cookies, mini chocolate chips, strawberries or even a drizzle of chocolate syrup. The possibilities are endless!

No Bake Mini Cheesecakes

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 8 oz whipped topping (ex: Cool Whip/Tru Whip)
  • 12 Oreo Cookies
  • sprinkles, optional

Instructions

  1. Place cupcake liners into a 12 count cupcake pan. Place 1 Oreo cookie in the bottom of the pan.
  2. Beat cream cheese, whip topping and sugar until well combined
  3. Spoon cream cheese mixture evenly on top of each cookie.
  4. If desired, sprinkle with rainbow sprinkles.
  5. Refrigerate for at least 1 hour before serving.
Yield: 12
Prep Time: 00 hrs. 15 mins.
Total time: 15 mins.
