Chicken Alfredo Roll-Ups



Last week we had this dish for dinner.  I miss it. I do. I was sad when  it was gone. It is that good. I found this recipe on Pinterest.  It looked so delicious and easy..it went immediately on my menu plan for the week.  That was a very good move on my part.  This dish has a few steps, but, it still quite easy to make for a weeknight dinner.  If you used jarred sauce (not that I recommend that..a homemade sauce would be much better :) and some premade chicken..it would be even quicker. Put this on your menu plan..you will not be disappointed.
{If you do not want to use jarred sauce, I have also included my Alfredo Sauce recipe}


Ingredients:
for chicken roll ups:
6-8 lasagna noodles {you may want to make a few extra, just in case they break}
2 1/2 cups alfredo sauce { jarred or homemade recipe below}
2 cups cooked, shredded chicken
2 1/2-3 cups shredded mozzerella cheese

for alfredo sauce:
1/4 cup butter
1 cup heavy cream
1 1/4 cup grated or shredded Parmesean cheese
1/4 cup parsley, if desired
garlic powder, to taste preference

Directions:
alfredo sauce:
Melt butter in a saucepan over medium heat. Add cream. Simmer for approx 5 minutes. Whisk in cheese and garlic powder. Heat thoroughly. Stir parsley.
Toss or spoon over cooked fettuccine noodles.
{if your sauce is  too thick, thin out with pasta water gradually}

chicken roll ups:
Preheat oven to 350 degrees. Spray 8in baking dish with non stick cooking spray. Boil lasagna noodles for 8-10 minutes. Dran noodles and rinse under cold water. This will help from them sticking together. Spread approx 1-2 tablesppons of sauce on each noodle.  Spread an even amount of shredded cheese and chicken on each noodle.{ About 1-2 tablesppon each ingredient}  Roll up lasagna noodle carefully and place seam side down in prepared dish.  Pour remaining alfredo sauce on completed roll ups in pan. Top with reamining cheese.
Bake for 30 minutes or until cheese is melted.

  15. These are delicious!!! I cooked 2 cloves of minced garlic in the butter for the Alfredo sauce and then followed all the other directions as written...this was a HIT with my family!!! I will make this again!!!
