Peanut Butter & Oatmeal Sandwich Cookies with Peanut Butter Filling



Oh..is it October, already?  I must get on the ball.  In a matter of weeks, there will be treat or treating to be done! This year we are slacking big time.  The kids have barely mentioned costumes and I haven't exactly volunteered to take them out for them.  It can be a bit of project with five kids.  I am thinking of just cutting some eyes in the our sheets and letting them all go as ghosts. That sounds OK, doesn't it?  It's really the candy that they are after, isn't it?  Although, our neighbors gave us gift certificates to their pizza restaurant last year..now, that was a treat :)

Speaking of treats..I made you some cookies! These cookies are so peanut buttery delicious and the filling just makes them even better.  You may just want to eat it by the spoonfuls before spreading it on the cookies.  I'm just guessing..not that I did it that or anything...


Ingredients:
for cookies:
1/2 cup brown sugar
1/4 cup sugar
2/3 cup peanut butter
1/4 cup vegetable shortening
1 tsp baking soda
1 tsp vanilla
1 egg
1 cup rolled oats
2/3 cup all purpose flour

for filling:
1-1/2 cup powder sugar
1/2 cup peanut butter
5 TBSP  milk

Directions:
for cookies:
Preheat oven to 350 degrees. Spray cookie sheet lightly with non stick cooking spray or line with parchment paper. In a bowl, mix shortening, sugars,peanut butter baking soda and vanilla. Beat until smooth.  Add in egg. Stir in flour. Mix. Then, add in oats.  Spoon heaping teaspoons on to prepared cookie sheets about 1 -1/2 inch apart.  Flatten each cookie with the bottom of a glass.
Bake for 10-13 minutes or until browned.  Remove from oven and let them sit for 3-5 minutes before taking off cookie sheet.  Once removed, cool completely before filling.
for filling:
Mix peanut butter, powder sugar and milk.  Add additional milk if needed for desired consistency.
Spread on a cookie and cover with another cookie, making a sandwich.

  9. These cookies look really good and I would like to try to make them but I have one question. You have butter listed in the directions but it isn't listed in the ingredients so I just wanted to ask how much butter does it take? Thank you for the recipe it looks really yummy.
