Chocolate Chip Cookie Brittle

I wanted to bake something. I wanted to eat something sweet.  I had a giant bag of chocolate chips and was pondering what to make with them.  I did not want to go to the store for additional ingredients either.  I got so lucky.  This recipe fell into my lap!  Well..figuratively.  My computer lap. My Internet lap?  Anyway..after a short time of searching..Tada...Brittle!  Mmph..brittle?   I wasn't familiar, but, it  sounded interesting and yummy. These are crunchy, chocolaty peanuty awesome-ness.  They are also can be made in a cinch, because, they don't take long to bake and the ingredients are usually stocked in your pantry.

Adapted From 

1 cup butter, softened
1 cup sugar
2 tsp vanilla
2 cups flour
2 cups chocolate chips, divided
1 cup chopped peanuts

Preheat oven to 375 degrees. Spray 15x10 in jelly roll pan lightly with non stick cooking spray.  In a mixing bowl, beat butter, sugar and vanilla.  Slowly, add in flour.  Stir in 1 cup chocolate chips and peanuts.  Press into prepared pan.  Bake for 20-25 minutes or until golden brown.
Melt remaining 1 cup of chocolate chips on low heat. Drizzle or pipe over brittle.  Let chocolate set completely, then, break brittle into pieces.

    1. Hi Amy- Yes, the pieces are crunchy, but, have the same taste as a chocolate chip cookie.
