Do you remember when I told you when the kids started school that I started eating healthier? Yeah..that didn't really last long. I made these and that whole concept kinda just fell off to the wayside. Every time, I ate one of these..a little voice said " oh..just wait until January..then, start cutting off the sweets ". I mean, with Thanksgiving, then, Christmas, then, New Years..seriously, why even put myself through the stress of it, right? Just enjoy myself! I will probably be regretting that decision in January when it time to buckle down, but, for now..there are these brownies. Ah..peppermint and chocolate. These are a dream. If you don't want peppermint overload..omit the frosting, they are just has heavenly without it.
Frosting Adapted From
1- 9 x 13 pan of brownies (boxed or homemade)
1 bag of mini Peppermint Patties
8oz cream cheese, softened
4 cups powder sugar
2 tsp peppermint extract
1 stick butter, softened
Preheat oven to 350 degrees. Spray 9 x 13 pan with non stick cooking spray. Mix brownie ingredients as desired. Pour 1/2 the batter on to the bottom of the pan. Place Peppermint Patties on top of brownie batter. Pour remaining batter oven patties. Bake for 30-35 minutes or until knife inserted comes out clean.
mix all ingredients until well combine. Frost on cooled brownies.
