Brownie Batter Pancakes

OK, sugar-free posts break is over.  Let's have a some pancakes, shall we?  

These are definitely not your average, let's have make pancakes for breakfast kind of pancakes, though.  I would keep these in the special occasion breakfast {or lunch..that's when we ate them} type of dish.  

With the holidays fast approaching, there are going to be plenty of special occasions, am I right?  Now, if you want to make these on your average Tuesday for breakfast before heading out for the day..hey, who I am to judge? I am the same person who has gave her children leftover birthday cake for breakfast when we were out of cereal. :)

So, dive in and enjoy!

Brownie Batter Pancake

Ingredients (12 pancakes)
  • 1 1/2 cup biscuit mix (ex: Jiffy or Bisquick)
  • 1 cup dry brownie mix
  • 1 cup milk
  • 2 eggs
Heat griddle or skillet over medium heat. Spray or grease lightly.
In a bowl, combine ingredients until well blended.
Pour approx 1/4 cup fulls on to heated griddle.
Cook until edges are slightly brown, then, flip. Cook until golden brown.
Garnish with chocolate syrup, whipped cream.
