{Crock Pot} Balsamic Honey Pork

Sweet and tangy pork that is perfect for sandwiches and cooked in your crock pot.

So, raise your hand if you have started Christmas shopping.  If you could see me, you would notice that my hand is not raised. I have been slacking a bit.   There is still about two weeks or so before Christmas, though..right?  I shouldn't slack.  5 kids. Budget.  I should of started around Halloween.  Good thing, Mr Plain is on top of these things.  He did purchase a few items online this week, but, there is still much to do.

Well, if you are unlike me and are  busy shopping, decorating, celebrating and all that goes with it, cooking is probably way down on your list.  This pork is just your answer!

Toss it in the crock pot, go shopping and have dinner ready when you get home.   It's tangy, sweet and has a bit of a kick. We had it on sandwiches and it was delicious.

You can also change it up and use chicken or even, beef.
{Crock Pot} Balsamic Honey Pork

Ingredients (Makes approx 20 small sandwiches )
  • 2-3 lb boneless pork should roast
  • 1 medium onion, chopped
  • 1 tsp thyme
  • 1/2 tsp dried rosemary
  • 1/2 cup chicken broth
  • 1 cup balsamic vinegar
  • 3/4 cup brown sugar
  • 3/4 cup ketchup
  • 1/4 cup honey
  • 1 TBSP Worcestershire sauce
  • 1 TBSP Dijon mustard
  • 1 tsp minced garlic
Instructions
Add pork and chopped onion into crock pot.Sprinkle with thyme and rosemary.
Pour chicken broth over meat.
Cover and cook on low for 9-10 hours or on high for 4-5 hours.
While cooking, in a saucepan,combine vinegar,ketchup,brown sugar,honey,Worcestershire sauce,mustard, and garlic. Bring to a boil. Reduce heat and simmer for 20-25 minutes or until slightly thickened.
Remove meat from crock pot and shred with 2 forks.
Return to crock pot and stir in balsamic honey sauce. Cook on low for an additional 1 hour.
