Peppermint Bark Popcorn


Well, yesterday  was a day off in a sense for me. I discovered that many other bloggers would not be posting to signify a moment of silence for the victims of the Connecticut school shootings. I felt compelled to join in.  It wasn't much, but, it was just my small way of contributing.  The victims and their families will continue to be in my thoughts and prayers.
And to our recipe....
Confession time.  I ate too great of a portion of this popcorn.  Like, probably, half of it.  This was over a few days mind you, but, I consumed way too much of it.  It's very addicting, sweet and just screams holiday treat.   It makes quite a bit of popcorn, so, it would make a perfect gift for neighbors, teachers, babysitters, co-worker, mailman..anybody!
I am going to whipped another batch of this in a few days for gifts...just hoping this time, I can restrain myself.

Ingredients;
16 cups popped popcorn ( or 2 bags of microwave popcorn{best results with natural or un-buttered flavor}
1 lb almond bark
1-6oz box of peppermint candy canes, crushed into small pieces {I put them in freezer bag and smashed up with a rolling pin}
1/4 tsp peppermint oil or peppermint extract
3/4 cup chocolate chips

Directions:
Place popcorn in a large bowl.  In a saucepan, melt almond bark according to directions.  When completely melted, add peppermint oil.  If you are using peppermint extract, your bark may get a bit lumpy, just stir it quickly.   Pour melted bark and crushed candy canes over popcorn. Stir until evenly coated.  Spread popcorn out on parchment paper  or foil.  Melt chocolate chips and then, drizzle melted chocolate over popcorn.  Let chocolate and almond bark completely hardened and cool.
