Yipee! Children are back at school!

Thank goodness. I was starting to go a little battier than usual around here. I am still chanting to myself about not getting sick. It is still working!

I think my taco addiction is pretty well known around here. So, today, we are making it into a pie!

We love this dish. Love it.

It is a snap to throw together, stash in the fridge, then pop in the oven when you need it.  It has all the great flavors of a taco with a nice, flaky crust.

Plain this down or spice it up and make it your own!

Taco Pie

Ingredients (Serves: 4-6)
  • 1 lb ground beef or ground turkey or chicken
  • 1 medium onion, chopped
  • 1/2 cup salsa
  • 1 envelope dry taco seasoning
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1 cup milk
  • 1/2 cup biscuit mix {ex: Bisquick or Jiffy}
Preheat oven to 400 degrees. Spray a 8 in baking dish or a pie plate with non stick cooking spray.
Cook meat and onion in a skillet until no longer pink. Drain if needed. Stir in salsa and taco seasoning. Blend well.
Transfer meat into prepared baking dish.
Cover with shredded cheese.
In a mixing bowl, combine biscuit mix, milk and eggs. Pour over cheese.
Bake for 25-30 or until knife inserted come out clean.
