Breakfast Quesadilla

So, for Christmas, I received a new waffle iron. My previous,14 year old iron bit the dust.  Waffles are not something that are made too often around here.  Well..maybe just these now.  I think the new waffle iron was more for my family, than, me.  They missed their homemade waffles.  Well, to my delightful surprise, Mr Plain took over the waffle-making tasks...making homemade waffle on three different mornings.  It was awesome. I could totally get used to waking up on the weekends from now one to hot, fresh, homemade waffles. Nice, huh?
I did make some breakfast too though.  These quesadilla were one of them.  My oldest daughter is a huge fan of breakfast burritos.  So, these were not a far leap from them. Ours is packed with eggs, cheese, bacon and onions. But, you can fill them with anything you heart loves.  These are also great to make ahead, toss in the freezer and warm up for a quick breakfast on the go.
{These went great with a side of homemade salsa!}


Ingredients:
3 eggs
2 flour tortillas
1/2 cup shredded cheddar cheese ( or your favorite kind )
2 bacon strips, cooked and broken into pieces
1 green onion,thinly sliced.

Directions:
Spray a skillet with non stick cooking spray. Scramble eggs until desired consistency.  In a separate skillet or griddle, place 1 tortilla.  Spoon eggs over half of the tortilla.  Sprinkle with cheese, bacon, onion and any other desired toppings. Fold over and cook over low heat or until cheese is melted.
