Homemade Fruit and Cereal Bars

Granola bars.  A pantry staple in this house for many years.

I've been making the chocolate chip variety for quite a while now, but, have never ventured into the fruit/cereal type..the "Nutri-Grain" bars as some know them as.  Well, between, the price and realizing that hey..they aren't that healthy,  I was out on the look out for a homemade version and found these!

They are delicious . Much better  than the boxed and really simple to make...perfect for breakfast on the go or a snack.

{If you would like a bit thicker bar, follow recipe below and use a 8 x 8 baking dish instead}

Homemade Fruit and Cereal Bars

Ingredients
  • 1 cup oats (not rolled)
  • 1 cup whole wheat flour
  • 1/3 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 cup canola oil
  • 1 egg, lightly beaten
  • 1 tsp vanilla
  • 1/4 cup apple juice
  • 1/2-2/3 cup - jelly, preserves or fruit spread of your choice
Instructions
Preheat oven to 325 degrees. Grease a 9 x 13 baking dish.
Mix oats, flour, brown sugar and baking powder in a bowl. Then, add in egg, oil, vanilla and juice. Stir until well combined.
Spread approx 2/3 of the mixture on the bottom of the pan (it will be thin).
Then, spread fruit/jelly over mixture. (Add a tablespoon of water to jelly if needed to make it easier to spread) Spread remaining dough over fruit/jelly.
It will be messy..use a greased spatula to make it a bit easier.
If desired, sprinkle the top with dry oats.
Bake for 20 minutes or until set.
