Strawberry Jam Quick Bread

A while back, I made some incredibly easy and incredibly delicious Strawberry Jam in the crock pot.
We have been consuming it like it was going out of style ever since.

On bagels, biscuits,in muffins, eating it straight from the jar ( ooh..not sure who is doing that!)...it's getting  eaten all the time.

With the last remaining few cups, I decided to make some bread.  Nothing too  fancy..something to have as a snack or breakfast or dessert. This fit the bill perfectly.


A lovely, soft bread ready to serve in little over an hour. Perfect served warm with butter or more jam..which is what I did.   A little overboard?  No! Of course not.

Try it and you will agree with me.
Now..back to the crock pot to make some more....possibly, raspberry this time?

Strawberry Jam Quick Bread

Ingredients
  • 1 1/2 cup flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 3/4 cup white sugar
  • 1/2 cup butter, softened
  • 1/2 tsp vanilla
  • 1/8 tsp lemon juice
  • 2 eggs
  • 1/2 cup strawberry jam, plus, additional for topping
  • 1/4 cup milk
Instructions
Preheat oven to 350 degrees.
Grease a 9 in loaf pan.
In a medium mixing bowl, whisk flour, salt, and baking powder. Set aside.
In a separate bowl, combine sugar, butter, and vanilla. Mix until fluffy.
Add in eggs. Stir in jam and milk.
Mix dry ingredients into wet ingredients. Combine well.
Spoon batter into prepared pan.
Spoon approx 1/4 cup jam on top of batter and swirl with knife.
Bake for 45-50 minutes or until knife inserted comes out clean.
Cool for 10-15 minutes before slicing.
