Whole Wheat Brownies

It's Friday.Have a brownie. What a week. Not great. Boston.Texas.Flooding. *sigh*
Mayhem and sadness.

Ah..the weather around our area. Has the weather been lousy near you too?  We have been hit with about 6000 tons of rain in the last week. 6000. It's really nuts.  I had to wear rain boots in my basement to do laundry. Not that there was a huge amount of water or anything (some people had and flooded..awful), but, our basement is an ugly mess of concrete that gets very wet when it rains.  Yuck. If my sons weren't completely out of socks and pants..it would of been  avoided. 
Next time this happens..they shall learn to dig in their hamper. 

With us being shut in due to weather..I was able to make these brownies.  They are whole wheat! Does that mean they are healthy?  I'm going to say no.  However, there is no oil.  No white sugar. And some whole wheat flour combined with regular.   Ooh..and less than a stick of butter.  Not too shabby.  They are a thick,chocolaty, fudgy,delight.
Can they make this week better? Nope.  But, they may just a had a little something to your Friday.

Whole Wheat Brownies:

6 TBSP butter
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/3 cup unsweetened cocoa powder
1 1/4 tsp baking powder
1 tsp salt
1/4 tsp baking soda
1 cup brown sugar, firmly packed
1 1/2 cup unsweetened applesauce
1 egg
6 oz semi sweet chocolate chips +  additional 2 oz

Preheat oven to 350 degrees.  Spray and line an 8in baking dish with parchment paper. In a bowl, whisk flours, cocoa, baking powder, salt and baking soda.  Set aside.  In a double boiler, melt butter with 6 oz semi sweet chocolate.  In  an additional bowl,  mix apple sauce, egg and brown sugar.  Add melted chocolate/butter mixture into applesauce egg mixture.  Slowly, add in flour mixture.  Combine.  Pour batter into prepared pan.  Top with 2 oz of semi sweet chocolate chips.  Bake for 40 minutes or until knife inserted comes out clean.
Makes 12 -16 brownies, depending on size
