Cake Mix Caramel Apple Cake- Guest Post: Mostly Homemade Mom

May 10, 2013
Hi guys! I have another fabulous guest post for you today!
Thanks for visiting us Kelly :)

Hello Table for 7 readers! My name is Kelly and I'm the girl behind the scenes at Mostly Homemade Mom. I LOVE shortcut recipes, have a {slight} obsession with my Crock pot, and am currently addicted to Burger King iced caramel coffee.  If you have a homemade version of said iced coffee, I'm begging you to email me. :)
There are a million and one ways to use a cake mix to make a great dessert, and I'm bringing you one of my absolute favorites - Cake Mix Caramel Apple Cake! You seriously can't go wrong with this cake, the apples and caramel combined with the instant pudding mix make it super moist and absolutely delicious. Take it over the top and serve it with some vanilla bean ice cream. Yes!

Cake Mix Caramel Apple Cake

1 box yellow cake mix (ignore the ingredients listed on box)
3.4oz box white chocolate instant pudding
1 cup water
4 eggs, slightly beaten
1/3 cup applesauce (or oil)
3 apples, peeled and chopped small
1/2 cup caramel ice cream topping

In a large bowl, combine dry cake mix and dry pudding mix. Add water, beaten eggs, and applesauce. Beat with an electric hand mixer until well combined, about 2 minutes. Gently stir in chopped apples. Pour into a bundt pan sprayed with non stick spray. Bake at 350 degrees for 55-60 minutes. Remove from oven and cool completely. Invert onto a cake plate and drizzle caramel ice cream topping over cake.

Yum! I'd love to have you over at Mostly Homemade Mom sometime - be sure to stop by and say hi! Thanks so much Erin for having me here, today. It's been a blast! :)

  9. Sarah, I just used Gala apples because that's what was on sale! I would think most varieties would taste delicious in this, but I'm not an apple expert. Enjoy! :)
