Pink Lemonade Cookies

Well, happy Monday everyone and  Happy Memorial Day to all my U.S. readers! Are you celebrating today? Having a picnic? Going to one? We had a super duper busy, weekend, so, today is a lovely day of doing nothing.  Well, that's the plan..we will see.
Today is also Secret Recipe Club Reveal Day!  My blog assignment this month is: 
Healthy.Delicious. I love that title...short and to the point :)




 Lauren is the lady is charge over at Healthy.Delicious.  She's been in the kitchen cooking since she was young and the name of her blog says it all.  Her food is healthy, but, also very delicious.   And, I mean delicious!  Check out some of my favorite finds:  Bakery Style Raspberry Chocolate Chip Muffins, or Sweet Potato Enchiladas or the Granola Crusted French Toast...all amazing!
I was sooooo thrilled to find this recipe.  The strawberry and lemonade flavors are all natural..no food dyes and no cake mix!  OK..I love my cake mixes, but, food dye is a thorn in my side.  In excess, it causes my kids to get a little nutty..seriously.  We avoid it wherever we can.  These cookies fit the bill for us. They are like little pillows are delight.  A little crunch, but, soft inside..oh, and the powder sugar on the top?

Pink Lemonade Cookies
Prep Time: 15 minutes
Cooking Time: 10 minutes
Serves: approx 15-18 cookies, depending on size

Ingredients:
  • 1 stick butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/3 cup pureed strawberries ( about 3-4 large strawberries)
  • 1/2 tsp vanilla
  • 1 TBSP lemon zest
  • 2 TBSP lemon juice ( about 1 lemon)
  • 2 1/2 cups flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 cup powder sugar
Directions:
  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper or spray lightly with cooking spray.
  2. In a bowl, beat butter and sugar until fluffy. Add in strawberry puree, vanilla., egg, lemon zest, and lemon juice.  Mix well.
  3. Stir in flour, baking powder, baking soda and salt. Combine until dough forms.
  4. In a small bowl, add powder sugar.  Scoop approx 1 TBSP of dough, form into a ball and roll in powder sugar.  Shake off excess.  Place on prepared cookie sheet about 2 inches apart.
  5. Bake for 10-12 minutes
