I was sooooo thrilled to find this recipe. The strawberry and lemonade flavors are all natural. No food dyes and no cake mix! Alright, I love my cake mixes, but, food dye is a thorn in my side. In excess, it causes my kids to get a little nutty. We avoid it wherever we can. These cookies fit the bill for us.
They are like little pillows are delight. A little crunch, but, soft inside..oh, and the powder sugar on the top?

Pink Lemonade Cookies

Ingredients (15-18 cookies)
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 1 egg
- 1/3 cup pureed strawberries ( about 3-4 large strawberries)
- 1/2 tsp vanilla
- 1 TBSP lemon zest
- 2 TBSP lemon juice ( about 1 lemon)
- 2 1/2 cups flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 cup powder sugar
Preheat oven to 350 degrees. Line cookie sheet with parchment paper or spray lightly with cooking spray.
In a bowl, beat butter and sugar until fluffy. Add in strawberry puree, vanilla., egg, lemon zest, and lemon juice. Mix well.
Stir in flour, baking powder, baking soda and salt. Combine until dough forms.
In a small bowl, add powder sugar. Scoop approx 1 TBSP of dough, form into a ball and roll in powder sugar. Shake off excess. Place on prepared cookie sheet about 2 inches apart.
Bake for 10-12 minutes
