Oven Baked Dutch Apple Pancake

Bobbi's story is truly inspiring.  In 2004, she lost an amazing 160lbs and is a breast cancer survivor. Truly amazing.  Her love of food and family is evident in her site.  Just a few of my favorites to try : Cinnamon Roll Cheesecake (wow!), Slow Cooker Orange Garlic Chicken (yum!) and Mini Baked Ham & Cheese Sliders (lunch!).

My choice this month was her Oven Baked Dutch Apple Pancake.  This would make a fabulous dessert, but, of course, pancake?  I made it for breakfast.  Mr Plain and I adored it. Sweet apple with a fluffy, browned pancake and topped with some powdered sugar.  Delicious.  It was also quite a breeze to make. Next time..I am may just even top it off with some ice cream and caramel sauce or some whipped topping.

Oven Baked Dutch Apple Pancake

Ingredients
  • 6 cups apples, peeled and sliced
  • 3 TBSP butter
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup flour
  • 3 eggs
  • 1/2 cup milk
  • 1 TBSP Greek yogurt
  • 1 tsp lemon juice
Instructions
In a medium size skillet, melt butter. Add apples and cook until tender. Approx 6-10 minutes.
Stir in brown sugar and cinnamon. Cook until sugar melts
Preheat oven to 350 degrees.
In a mixing bowl, combine flour, eggs, yogurt and lemon juice. Beat until smooth. Pour over apple mixture in skillet.
Put skillet directly into the oven. Bake for 20-30 minutes or until pancake is puffed and browned.
Topped with powdered sugar if desired.
Best served warm
