Baked Berry French Toast #SundaySupper

I am so very excited to be back in the #SundaySupper group this week! Woohoo! With summer in full swing, it's been a little tough to participate, but, this week, we are good to go.  
This week's theme is Breakfast for Dinner and our lovely host is Connie at The Foodie Army Wife. 




We are HUGE for eating breakfast for dinner. It's nearly the only thing we can have for dinner that every single person loves. It's just so awesome.  If we lived on pancakes, waffles and french toast, feeding time would possibly be a wee bit less of a headache at times.

For my dish, we are having baked french toast.  It is a bit similar to this and  this from our recipe collection. Also, a bit different.  This is packed with fresh berries.  OK, yes, berries.  I have been smacking you guys in the face with berries the last few weeks, but, hey, it's berry season and we are loving everything berry at my house this summer. But, no fear, some chicken and chocolate stuff coming soon. ;) 
But, back to breakfast...This french toast is very creamy, fruity and it's topped with a bit of cinnamon sugar. We topped ours with a little warm butter and syrup (mixed with some berries, of course)
Perfect for having breakfast for dinner.






Baked Berry French Toast:
Prep Time:  15 minutes
Baking Time: 1 hour
Serves: 4-6

Ingredients:
  • 6 slices french bread, cubed
  • 1 cup mixed berries of your choice
  • 4 oz cream cheese, cubed
  • 6 eggs
  • 1 cup whole milk or cream
  • 1/4 cup maple syrup
  • cinnamon sugar, for sprinkling, optional
Directions:
  1. Preheat oven to 350 degrees.  Grease and 8in baking dish.  
  2. Place 1/2 bread cubes on the bottom of the dish. Sprinkle with cream cheese cubes. Then, sprinkle berries. Cover with remaining half of bread cubes.
  3. In a mixing bowl, whisk eggs, milk and maple syrup until blended.
  4. Pour over top of bread cubes.  Sprinkle with cinnamon sugar if desired.
  5. Cover and bake for 30 minutes.  Uncover and bake an additional 30 minutes.
  6. Let it cool at room temperature for approx 10 minutes before serving.
