{Crock Pot} Salsa

 I feel like Mother Nature has spoiled me all summer.  It was so lovely. We hit the high 80's maybe twice? The air conditioner was barely touched.   Then, today.  Eh..96 degrees.  Yesterday was 90. Tomorrow we are getting a break..88 degrees.  And the humidity!  It's my mortal enemy of the summer.  Kinda like snow pants in the winter...drives me nuts.

Forget about my whining.  It could be worse.  Mr Plain told me that it's 35 degrees and snowing in Barrows, AK.  No, I don't know why he knows this. Sometimes, he's just a fountain of information.  Keeps me on my toes, I guess :)

Anyhoo..you know what's great when it's hot out? Your Crock Pot!  

It sure does help keep the heat our of your kitchen, doesn't it?  Mine has been used everyday since this heat wave.  So, this week, I decided to give some salsa a try in the ole' crock pot.  It worked like a charm.  

Pair it with a side of chips, add or add it to your tacos. Enjoy!

Crock Pot Salsa

Ingredients

  • 10 medium plum tomatoes, cut into wedges
  • 1/2 onion, chopped
  • 1 tsp garlic powder
  • 2 tsp sugar
  • 1 tsp cumin
  • 3 oz canned jalapenos, drained

Instructions

  • Add all ingredients into pot. Cover and cook for 2-3 hours on low or until veggies are soft. Let it cool slightly, then, puree to desired consistency in blender or food processor.

Yield: 2 1/2 cups

Prep Time: 00 hrs. 15 mins.

Cook time: 03 hrs. 00 mins.

Total time: 3 hrs. 15 mins.
