Brownie Batter Cereal Mix

Why did I make this? Why?  I have been doing pretty good ( not perfect ) on my return to Weight Watchers.  This was a bit of a downfall for me.  Ugh..this and a little bit too much ice cream last week. Oops. Back on track tomorrow.
Let's talk about cereal mix, shall we?  I wasn't sure if this qualified as 'puppy chow'.  You know puppy chow.  No, it's not for dogs.  But, it's all the rage in food blogs in a huge assortment of flavor concoctions.   It's essentially sweet cereal mix, usually made with powdered sugar. Which..this is. Without the powdered sugar though.  OK..I guess this could qualify as puppy chow. Oh, well, call it whatever suits your fancy.  Just make sure you make it and don't expect to eat a small little bowl to sample.  Get ready to chow down on it and go back several times to snack on it.  Especially during the day when your family isn't home and it's staring at you, calling your name and won't leave you alone until you have just one more bite.  I'm just guessing that's what will happen..no experience personally with that whatsoever.
This is a great treat and doesn't take long to whip up.  It's quicker than a pan of brownies and tastes just like them with an added crunch.  A very delicious snack..just remember to share them with loved ones :)




Brownie Batter Cereal Mix
Prep Time: 10 minutes
Baking Time:  40 minutes
Makes: approx 6 cups

Ingredients:

  • 1-14.25 oz box of Chocolate Chex Cereal (or any rice cereal will work too)
  • 1/3 cup butter
  • 1 cup chocolate chips
  • 1 cup dry brownie mix
  • rainbow sprinkles, optional
Directions:
  1. Preheat oven to 250 degrees. Lightly spray a large baking sheet with non stick spray  or line with parchment paper.
  2. In a small saucepan, melt chocolate chips and butter over low heat.  Stir frequently until smooth.  Set aside to cool for a minute of two.
  3. In a large mixing bowl, add cereal.  Pour melted chocolate over cereal and coat well.  Stir in brownie mix and sprinkles.  Coat completely.
  4. Spread cereal mixture in a single layer on baking sheet.
  5. Bake for 40 minutes, stirring half way through.
  6. Let cereal cool before serving.  Store any leftovers in a covered container.
