Skillet Chicken Alfredo Lasagna Toss



Can I just share a bit with you guys today?  It's just a bit. Nothing too heavy or serious or extreme.  It's just life at my house lately.  It's NUTS.  Ever since school has started, it's like a constant stream of things to do.
Everything from art clubs to ice cream socials to PTO meetings to endless meetings for Mr Plain to my daughter taking on a dog walking job to my autistic daughter now getting homework (she is not happy about that..makes it tough) to my youngest starting preschool and that whole adjustment thing to having 6 people in my family at 4 different schools in the same district..in the same town.  And they are all on a different time schedule and I'm the primary mode of transportation for most of them. Ah!!  I can't scream too loud..oh..because, I'm getting a cold too.  Yeah..makes it fun.
Whew..that's a bit better . So sorry for that..sometimes, you just have to throw yourself a little pity party, don't you?  Mine is done. Thanks for listening :)
Let's talk pasta instead.  This dish is a a toss in a skillet, close the lid, melt some cheese and Tada! dinner kinda dinner.  It's perfect for all the crazy days that happen and you feel too guilty to order your family pizza again and need to cook something for them that is homemade, tasty and will fill them up.
You can totally forget about the chicken with this or use red sauce instead or be really healthy (unlike mine)  and toss a ton of veggies in it.  Whatever you got in the fridge and pantry will work.





Skillet Chicken Alfredo Lasagna Toss
Prep Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4-6

Ingredients:
  • 1 cup cooked chicken
  • 8 oz lasagna noodles (no boil) broken into pieces
  • 2 cups Alfredo sauce - jarred or homemade version can be found here or here
  • 1 cup shredded five cheese Italian blend cheese or mozzarella works fine too
Directions:
  1. Spray a large skillet with cooking spray or coat with oil.  Add in chicken.  Add in lasagna noodles 
  2.  Pour in Alfredo sauce and mix it well with noodles and chicken.   
  3. Increase your heat until sauce boils, then, lower the heat to medium low and cover with lid.
  4. Cook for 15-18 minutes or until noodles are tender
  5. Preheat your broiler.
  6. Sprinkle cheese over the top  and cook under broiler to cheese is bubbly and melted
