Peanut Butter and Caramel Cookie Bars

Some big news here at the blog....Table for Seven is officially on Instagram! Yoohoo!  It's big..huge..mammoth news.  Can you tell that I'm a little excited?  OK..let me fill you in.  Mr Plain and I may perhaps be the only two humans on the face of the earth that do no have IPhone.  Do not.  We have smart phones, but, not IPhone.  We have Windows Phones, which, we love.  They are great, but, they are lacking the Instagram app.  Even Windows 8 doesn't have it.  So, Instagram wasn't possible.  Until now!  My lovely husband found me a legit app that connects with Instagram without having an IPhone (Instagraph) and I've been loving it ever since :)  Are you on Instagram?  Leave me your profile in comments and I'll make sure to follow you!


Enough blog business.  Let's talk peanut butter, chocolate and caramel. Then, let's wrap it all up in a nice little cookie bar.  Mr Plain found these too. Isn't he sweet?  He does love his peanut butter and these definitely will satisfy his (and your) peanut butter addiction.
The break down:
bottom layer: peanut butter cookie base with chocolate and peanut butter chips
second layer: more peanut butter, but, mixed with caramel
top layer:  some more chocolate..white and dark.
Yep..they are too die for. Yum.

Peanut Butter and Caramel Cookie Bars
Prep  Time: 15 minutes
Baking Time: 15 minutes
Refrigerator Time: 1 hour
Makes: 12-16 bars

Ingredients:
  • for bottom layer:
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup creamy peanut butter
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 cup flour
  • 1/4 cup peanut butter baking chips
  • 1/4 cup chocolate chips
  • 2 tsp vanilla
  • for second layer:
  • 3/4 cup caramel (jarred or homemade)
  • 1 cup creamy peanut butter
  • for top layer:
  • 1/2 cup chocolate chips
  • 1/2 cup white chocolate chips
Directions:
  1. Preheat oven to 350 degrees. Spray/grease 9 in baking dish.
  2. In a mixing bowl, beat sugars and butter until fluffy.  Add in peanut butter, egg and vanilla.
  3. In a separate bowl, whisk together flour, baking soda and baking powder.
  4. Slowly add dry ingredients into peanut butter mixture.  Mix until combined.  
  5. Fold in peanut butter chips and chocolate chips.
  6. Spread batter into prepared pan and bake for 15-20 minutes or until lightly browned.  Let it cool completely.
  7. In a small saucepan, melt peanut butter with caramel until smooth.  Spread over cooled cookie base.
  8. Refrigerate for 20 minutes to set.
  9. In another saucepan, melt white chocolate chips and chocolate chips until smooth. Spread over caramel.  Refrigerate for an additional 20-30 minutes until set.
