Cake Mix Cinnamon Coffee Cake

Happy 2014! It's my first official recipe of the new year!  Of course..it's a dessert! How was every one's New Years Eve? Did you stay in? Go out? Make it until midnight?  We stayed in, had a quiet night with the kids and dined on pizza and s'mores.  Nope..did not make it until midnight.  I crashed early, as did the kids.  They give it their best effort and are getting closer each year, but, they still miss it.  Just barely.  Next year, will be their year :)  They still have a great time though.

I have a wonderful coffee cake for you to kick off the new year.  A moist, soft, buttery, coffee cake that starts off with a good ole' cake mix.   My favorite way to bake a cake!  It's topped off with cinnamon and some crunchy walnuts.  

A great little cake for breakfast, brunch or dessert.

Cake Mix Cinnamon Coffee Cake

Ingredients (Serves: 6-8)
    FOR CAKE
    • 1 package white cake mix
    • 1 egg
    • 1 cup light plain, Greek yogurt
    • 1/4 cup butter (1/2 stick), melted
    • 1 tsp vanilla
    FOR TOPPING
    • 1/2 cup flour
    • 3 tsp ground cinnamon
    • 1/2 cup brown sugar
    • 1/2 cup (1 stick) butter, melted
    • 3/4 cup chopped walnuts (optional)
    Instructions
    Preheat oven to 350 degrees. Grease 9 x 13 baking dish.
    In a mixing bowl, combine cake mix, egg, Greek yogurt, melted butter and vanilla. Beat until well combined. Pour batter into prepared baking dish.
    In a separate bowl, mix flour, brown sugar, cinnamon and melted butter. Toss until combined well. Stir in walnuts.
    Sprinkle walnut mixture on top of cake batter evenly.
    Bake for 30 minutes or until knife inserted comes out clean.
