{Crock Pot} Chicken Parmesan

This is barely a recipe.  It's one of my "toss some stuff in the crock pot because I'm too lazy to cook dinner, but, don't want to to spend money on takeout" kinda dishes.   However, it's darn tasty, so, why not share it with you guys?  Also,  it's more chicken.  It's been forever since a chicken dish has been posted and now, two in two weeks.  I know, crazy.
Not sure if this can legitimately be called Chicken Parmesan?  It has chicken and Parmesan included, but, zero breadcrumbs.  No breading.  Let's call it low carb then!  That sounds pretty good, doesn't it?  Oh..it doesn't matter what it's called.  It's embarrassingly easy to literally toss in your crock pot and goes great with pasta (which in my house is the gold ticket).  A great addition would be a few veggies, maybe peppers? Zucchini?  Carrots?  Or..toss it together, add a salad, some garlic bread and call it dinner!

Crock Pot Chicken Parmesan
Prep Time: 10 minutes
Cooking Time: 4-6 hours
Serves: 6-8

Ingredients:
  • 2 lbs boneless chicken breasts (this was 4 large breasts for me, size/amount may vary for you)
  • 2 cups of your favorite spaghetti sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Directions:
  1. Place chicken breasts in crock pot.
  2. Add spaghetti sauce. Cover and cook on low for 4-5 hours.
  3. Shred chicken with two fork and mix with sauce. 
  4. Add cheese in with chicken and cook and additional 45 minutes or until cheese is melted.
  5. Serve over pasta.
