{Crock Pot} Chicken and Dumplings

Today is a pretty darn special day.  It's my daughter's birthday.  Yes, all my kids birthdays are special. But, her birthday is the one that started it all.  It's not only her birthday, it's the day I became a mom for the first time. So, the feelings is a bit different.  Not, better..just different..you know? It's also her last year before becoming a teenager. One to go.  Next year..13. I try not to think about that..I've heard it's not very pleasant at times to have a teenager in your house.  Oh..she's a doll and not a problem at all, so, there's nothing to worry about, right?  Right?!  Let's focus on the now..Happy Birthday Sweetheart :)



Chicken and Dumplings.  The perfect cold weather, make you feel warm all over comfort food.  This version is cooked up in the crock pot and it will make your kitchen not only feel warm and toasty, but, it will smell amazing.  It's a great, simple meal to warm you up.
{if you do not wish to use refrigerator biscuits, this will also work with your favorite homemade biscuit recipe, but, you cooking time may change}



Crock Pot Chicken and Dumplings
Prep Time: 15 minutes
Cooking Time 4-5 hours
Serves: 6

Ingredients:
  • 4 boneless chicken breasts
  • 14.5 oz  cream of chicken soup (homemade or this is what I used)
  • 1 1/2 cup chicken broth
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1 TBSP butter
  • 2 cups frozen carrots
  • salt/pepper, to taste preference
  • 12 oz refrigerator biscuits- I used these 
Directions:
  1. Place chicken breast in crock pot.  Add in all ingredients on top of chicken except biscuits.
  2. Cover and cook on high for 4 hours.
  3. Remove chicken from pot and shred.
  4. Place back in crock pot and mix to combine with soup mixture.
  5. Separate uncooked biscuits and place on top of chicken mixture.
  6. Cook an additional hour or until biscuits are baked through.
