Crock Pot Apricot Chicken

Contrary to what has been posted around here lately, my family has been eating more than brownies, cake and granola bars.  Finding a dinner recipe that everyone (OK, nearly everyone) likes and is easy to whip up can be a challenge at times.  Finding a dessert recipe is a breeze though.

Today though..we have a dinner recipe! Yay!  My favorite kind of dinner recipe..chicken and crock pot.
This recipe is very similar to my Crock Pot Cranberry Chicken.  We are just switching out the cranberries for apricot preserves and using tenders instead of shredding chicken breasts.
It 's a sweet chicken that tastes great over rice.

Crock Pot Apricot Chicken
Prep Time: 10 minutes
Cooking Time: 6 hours
Serves: 6

  • 2 lbs boneless chicken tenders
  • 1 cup apricot preserves
  • 1 envelope dry onion soup mix {or homemade version}
  • 1/4 cup onion flakes
  • 2 TBSP beef bouillon granules 
  • 1/2 tsp onion powder 
  • 1/4 tsp garlic powder 
  • 1 cup Catalina dressing {or homemade version:}
  • 1/4 cup ketchup 
  • 1/4 cup sugar 
  • 1/4 cup red wine vinegar 
  • 1/2 tsp paprika 
  • 1/4 tsp Worcestershire sauce 
  • 1/2 cup canola oil 
  • salt/pepper, to taste

  1. Place chicken in crock pot.
  2. Pour remaining ingredients on top of chicken.
  3. Cover and cook on low for 6 hours or on high for 4 hours.
