A way, way, long time ago, I spotted this recipe over at Amanda at Diary of a Semi-Health Nut. It's been tucked away in my bookmarked recipes since then. Chocolate, toffee and a big ole' cookie? How could this be passed up?! It was kinda a bummer, no way to make it.
Then, a few months back, I got my iron skillet and boom! Been using it like crazy. It was now time to try Amanda's cookie. So glad that it was still bookmarked. As you can tell my below picture, it was a hit. We loved it.
It vanished! I kid you not, in like an hour. It was also a snap to make. From now on, all cookies around here are going to be baked in a giant skillet.
Iron Skillet Chocolate Chip Toffee Cookie

- 2 cups flour
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 cup applesauce
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup chocolate chips
- 1/4 cup toffee baking chips
Preheat oven to 350 degree. Oil/grease 9 in iron skillet.
In a mixing bowl, whisk together flour, baking soda and salt. Set aside
In a separate bowl, mix sugars and butter. Add in egg and applesauce.
Slowly add dry ingredients into wet. Mix until combined.
Fold in chocolate and toffee chips.
Pour batter into prepared skillet. Bake for 30-40 minutes.
Leave in pan approx 10 minutes before removing.
