Mashed Potato Casserole {revisited}

There are many recipes here on the blog that we eat pretty regularly.  This just happens to one of them.  This casserole was originally posted way back in 2012.

It really delicious and a snap to put together.  Which is why I decided to give you guys a second look at it. :)

Mashed Potato Casserole

Ingredients (Serves: 6)
  • 8 medium potatoes (approx 2 lbs, peeled and cubed)
  • 1 cup evaporated milk
  • 1/4 Parmesan cheese
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 4-6 slices of bacon, cooked and crumbled ( or about 1/2 cup of bacon bits will work too)
  • salt/pepper, to taste preference
  • 1/2 tsp garlic powder
Instructions
Preheat oven to 350 degrees. Spray/grease a 8-9 in baking dish.
Boil potatoes in large pot until tender. About 20-30 minutes. Drain well.
Return potatoes to pot. Add milk, sour cream, salt, pepper, and garlic powder. Beat/mash well until smooth and creamy.
Fold in 1 cup of cheddar cheese.
Spread evenly into prepared dish and bake for 20 minutes.
Remove from oven. Top with bacon and remaining 1 cup of cheddar cheese.
Return to oven and bake until cheese is melted.
