Caramel and Marshmallow Cereal Mix

A sweet, crunchy, cereal mix that can be baked in the oven or microwave...


Sweeten cereal mix isn't something I make to very often.  If cereal is bought, it's for breakfast.  We eat alot of cereal in the summer, for breakfast and snacking.  But, this recipe sounded pretty darn easy and delicious, so, why pass it up?  Also, besides the cereal (which was on sale!) and M&M's everything else was in my pantry.


I baked ours in the oven, but, the original recipe gives instruction to make in the microwave. Which, I would of done, but, my microwave is a bit touchy and honestly, a pain in the butt, so, in the oven it went.
This mix is really crunchy, sweet and very addictive.
Be ready to eat multiple bowls of it and one sitting!




Caramel and Marshmallow Cereal Mix
Prep Time: 15 minutes
Baking Time:
Makes:   approx 4-6 cups of mix

Ingredients:
  • 12 oz box  corn cereal ( I used Crispix)
  • 3/4 cup brown sugar
  • 1/2 butter
  • 1/2 tsp vanilla
  • 1 cup mini marshmallows, plus additional for stir in, if desired
  • 2-3 cups M&M candies
  • 1/4 cup light corn syrup
Directions:
  1. Preheat oven to 250 degrees.  Cover large baking sheet with parchment paper or grease well.
  2. In a saucepan, melt brown sugar, butter, corn syrup and marshmallows.
  3. Bring to a boil, then, let is continue boiling for 10 minutes.Remove from heat.  Stir in vanilla.  Let mixture cool for about 5 minutes.
  4. Carefully, pour mixture over cereal.   Mix until well coated.
  5. Spread mixture evenly on baking sheet. Bake for 1 hour. Stirring mixture every 15-20 minutes.
  6. Remove from oven.  Let mixture cool for a bit, then, remove from pan.
  7. Toss mixture with mini marshmallow and M&M's.   Store in airtight cover container.
