Taco Casserole-Guest Post: Simple Life of a Fire Wife

Hi, I am Emily from Simple Life of a Fire Wife!  I love co-hosting Share Your Stuff Tuesdays with Erin each week and am so excited to be guest posting here at Table for Seven today!  I am going to share with you a kid favorite in our house-Taco Casserole!





You will need:
1 11oz bag of Nacho Cheese Doritos
1 packet taco seasoning
1 lb ground beef
1 can (10 3/4oz) condensed tomato soup
1 cup chunky salsa
1/2 cup milk
2 cups shredded cheddar cheese
corn-optional
sour cream

Cook the beef in the skillet until brown, add taco seasoning as directed on the package.  Add soup, salsa, milk, corn and half the cheese.  Spoon into a 9x13 baking dish.  Crush the Doritos into small pieces into the dish (usually about half of the bag) and mix until it is liberally combined into the meat mixture.  Cover and bake at 400° for 30 minutes.  Sprinkle with remaining cheese and cook uncovered for another 5 minutes, or until cheese is fully melted.  When serving add a dollop of sour cream on top.
