Fluffernutter Mug Cake recipe

A delicious cake done in just minutes in your microwave...
I guest posted this delicious mug cake over at Kleinworth and Co a few weeks back and wanted to share the recipe..just in case anyone missed it :)
It's the most amazing cake that takes a mere 2 minutes to bake up in your microwave.
It's great when that sweet craving hit and you wanted something quick!

Side Note:  If your mugs are on the smaller side, this recipe will make enough batter to fill 2 mugs.  If your mugs are larger, this will make 1 mug cake.

Fluffernutter Mug Cake
Adapted from Mug Cakes
Prep Time: 5 minutes
Cooking Time: 2 minutes/each mug
Makes:  2 small mug cakes or 1 large mug cake

  • 2 TBSP creamy peanut butter
  • 1 egg
  • 1 TBSP canola oil
  • 1/4 cup milk
  • 1/4 tsp vanilla
  • 1/4 cup brown sugar
  • 5 TBSP self rising flour
  • 2 TBSP marshmallow fluff (homemade version), plus, more for topping
  • dash of salt
  1. In a small mixing bowl, whisk together peanut butter, egg and oil.  
  2. Stir in milk, vanilla and brown sugar.  Then, flour.
  3. Fold in marshmallow fluff.
  4. Divide batter between 2 mugs evenly. 
  5. Top with another tablespoon of marshmallow fluff.
  6. Microwave separately for 2 minutes or until baked through (depending on microwave, you may need just another 20-30 seconds)
  7. For best taste, eat immediately.
