Easy Skillet Chicken Cordon Bleu

A delicious breaded chicken topped with ham and swiss..

Life here is still in busy mode. We are finally on the path to moving into our new house(yay!)  But, packing is been a bit of slow moving process.   My husband has been very faithfully getting boxes from his work. However, the majority of them are sitting in our basement and are still empty.  They were in my living room, but, the amount of them became too much for the small space.  That, and my 4 year old was taking each one and turning them into a car, a spaceship, a fort or using them simply to hide in.  Into the basement they went and my not-wanting-to-pack-but-do-something-other-than-pack-plan started.    I know, not a great plan.
But, we still have a few weeks before the big day, so, next week is really the week to get things going.

For now, we have chicken.  We haven't had chicken on the blog in like, forever!  You guys know how we love our chicken at my house. This chicken is so good, it's in our frequent chicken eating dinner rotation.  We seriously love it.  It's got a crunchy breading, then, topped with a slice of ham and Swiss.  The classic Cordon Bleu combination.    I know that traditional cordon bleu has the chicken stuffed with ham and cheese, but, you can think of this as an easy, weeknight version instead.
I stuck with just one slice of ham/cheese each, but, you can load it up with as much as you like!

Skillet Breaded Chicken Cordon Bleu
Prep Time: 20 minutes
Cooking Time:  30-40 minutes
Serves: 6-8

Ingredients:
  • 3-4 boneless chicken breast (about 1 lb)
  • 1 egg
  • 1 1/2 cup bread crumbs
  • 1/2 cup milk
  • 1 1/2 cup flour
  • 1/4 cup butter
  • 3-4 thin slices of ham
  • 3-4 slices of Swiss cheese
  • salt/pepper. to taste preference.
Directions:
  1. Rinse and pat chicken dry. If desired, cut into slices. ( I find thinner slices cook up fast and my kids like it better. But, whatever you preferred will work)
  2. In a shallow dish, whisk together milk and egg.  Set aside.
  3. In another shallow dish (or pie dish), mix flour with salt/ pepper. 
  4. In a third shallow dish, add bread crumbs.
  5. In an assembly line fashion, coat chicken in flour, then, egg/milk, then, bread crumbs.
  6. Melt butter in a large skillet over medium heat. (you will need a lid for your pan).
  7. Add chicken pieces and cook on each side for 5-10 minutes, depending on the size of your chicken breasts.  
  8. Once chicken is browned and crispy, add slice of ham on top of chicken.  Then, top with a slice of Swiss cheese.
  9. Cover pan with a lid and let it cook until cheese is completely melted and chicken is cooked through.
  10. If desired, put pan under your broiler to get the cheese a little crispy.
  11. Let chicken sit for 5 minutes before slicing.
