Swiss Cheese Chicken Casserole

Yes, it is totally not a dessert post!  I'm actually kinda excited about that.  We had a fabulous Christmas, but, getting yourself into a sort sweet-coma-overload is not tough to do.   Honesty, I'm still kinda in my sweet-coma.  You are too, aren't you?    This will help us.


It's a really easy chicken casserole that tastes delicious and will help ease you back into cooking dinner after all your holiday left-overs are gone.  You just need to pair this up with a veggie (or not, but, that's the responsible thing to do) and your dinner is ready to go!

Swiss Cheese Chicken Casserole
Prep Time:  15 minutes
Baking Time: 30-40 minutes
Serves: 4-6

Ingredients:
  • 1.25 lbs boneless chicken breasts (about 3-4 breasts, depending on the size. Should be enough to nearly fill the bottom of your pan when chicken is laying flat)
  • 8 slices Swiss cheese
  • 1 cup cream of chicken soup (I use this brand, but, homemade will work also)
  • 1/4 cup plain Greek yogurt
  • 1 cup dried seasoned stuffing cubes (or a 6oz box of prepared mix)
  • 3/4 cup butter, melted
Directions:
  1. Preheat oven to 350 degrees.  Grease bottom of 9x13 baking dish
  2. Lay chicken breast flat on bottom of dish.
  3. Lay cheese slices on top of chicken.
  4. In a small bowl, mix soup with Greek yogurt until combined.  Spread mixture on top of cheese slices.
  5. Sprinkle top of cheese with stuffing cubes.
  6. Pour melted butter on top of it all.
  7. Bake 30-40 minutes or until chicken is cooked thoroughly.  Baking time may vary depending on the size of your chicken.  Mine only took about t30 minutes, but, they were very thin.  Thicker pieces will require longer time.
