Peanut Butter Cereal Bites

As I mentioned to  you guys the other day, I'm in total no-bake mode already. Spring is just starting and I'm ready to eat nothing but salads, sandwiches and chips every night for dinner. It was only about 50 degrees here today, but, that's OK.   I'll take it.  My kids have been running around the backyard in t-shirts and my son asked to wear shorts today ( that would be a no).  Crazy. Gotta love livin' in the Midwest!



Today's no-bake treat is made with cereal.  However, they are not exactly for breakfast.  More of a dessert. Of course, if you like to consume treats packed with powdered sugar for your early morning meal, then, these are for you.  If not, dessert or, even a snack should work perfectly.
They are really simple to make and you can chose any-kind of crunchy, peanut butter cereal to go with them.
Ours were loaded with Cap'n Crunch Peanut Butter. But, Cheerios, Jiff Cereal,  or Reese's Cereal will also work.

Peanut Butter Cereal Bites
Prep Time: 15 minutes
Fridge Time: 2 hours
Makes:  approx 24 bites, depending on size you make

Ingredients:
  • 3/4 cup creamy peanut butter
  • 1/4 cup butter, softened
  • 1 1/4 cup peanut butter cereal, (ex: Jiff, Cheerios, Cap'n Crunch)
  • 1 cup powdered sugar
  • 1 cup sprinkles of your choice
Directions:
  1. Crush cereal in your blender or food processor.  Keep the pieces on the smaller side, but, not completely  blended to dust.  Crush them into about 1 cup worth of cereal.
  2. In a mixing bowl, beat together peanut butter and butter until smooth.  Add in powder sugar and cereal. Mix until combined.
  3. Shape peanut butter mixture into approx 1 inch size balls.  Roll in sprinkles and place on a baking sheet.
  4. Refrigerate for at least 2 hours before serving.
  5. Keep leftovers covered in fridge.
