Peanut Butter and Jelly Bars

Peanut butter.  Let me tell you how much peanut butter we eat around here.  Enough to feed a small army.
Which, really,when you think about it, is kinda what lives in my house.  A small army of children.  So, it makes sense now why the peanut butter jar is always empty.  OK, ignore all that. Anyway, it's alot.

We go through a ton of jelly too.  I love to make it homemade, but, the preferred flavor for my kids is grape. Good ole' grape jelly.   Such good stuff, I have to admit.

These bars have the best of both worlds going on with them.  Peanut butter and grape jelly.  Pretty much one of the greatest food combinations of all time.  Wouldn't' you agree?

They have a nice shortbread crust, warm jelly for the middle, a brown sugary topping and then, drizzled with melted peanut butter.  Yikes.  These are fabulous-ness at its best.

Get a glass of cold milk and dig in.




Peanut Butter and Jelly Bars
Prep Time: 15 minutes
Baking Time:  40 minutes total
Makes:  18-24 bars

Ingredients:
  • for crust:
  • 2 sticks butter, melted
  • 2 cups flour
  • for filling:
  • 1 cup grape preserves
  • for topping:
  • 2 cups flour
  • 1 1/2 cups brown sugar
  • 2 sticks butter, cold, cut into bit pieces
  • for drizzle:
  • 1/2 cup peanut butter
Directions:
  1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking dish.
  2. In a mixing bowl, combine melted butter and flour for crust until dough forms.  Press down into baking dish and flatten to cover bottom of pan.
  3. Bake in preheated oven for 15 minute and removed from oven.
  4. Let crust cool completely.
  5. Spread grape preserves on top of cooled crust.  
  6. In a large bowl,  add flour and sugar for topping.  Add in butter pieces.  With a pastry cutter or a fork, cut until you have coarse crumbs.
  7. Pour topping on top of preserves.
  8. Return to oven and bake for an additional 20-25 minutes or lightly brown.
  9. Microwave peanut butter until smooth.  Drizzle over warm bars.
  10. Cool before cutting.
