Banana Snack Cake with Banana-Cream Cheese Frosting

I may of mentioned it  a couple times before, but, there is a major banana lover living in my house.  He is currently 8 years old and if possible, would consume bananas or any type of banana-baked good every day of of life.  He literally asks me to make banana bread at least twice, maybe three times a month.  Perhaps more.

I'm all for a good batch of banana bread, but, this time, I convinced him we needed to make banana cake instead of bread.  Holy Cow.  He was excited.   Even more once he whoofed down two pieces in record time and then, asked for a third.  Not blaming him, it's really delicious.

A nice, simple,cake with a great banana flavor. Then, the frosting? Um, it's amazing.  Like, try not to eat it all with a spoon before frosting your cake with it.  I kinda had that problem.

Make this one quickly guys, it's a winner.

Banana Snack Cake with Banana-Cream Cheese Frosting
Prep Time:  30 minutes
Baking Time: 30 minutes
Serves: 8

Ingredients:
  • for cake:
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup canola oil
  • 2-3 ripe bananas, smashed
  • 1 cup whole milk
  • 2 tsp vanilla
  • for frosting:
  • 1 ripe banana, cut into pieces
  • 4 TBSP butter, softened
  • 8oz cream cheese, softened
  • 1 tsp vanilla
  • 3 cups powdered sugar
Directions:
  1. Preheat oven to 375 degrees. Grease a 9 x 13 baking dish.
  2. In a bowl, whisk together flour, baking soda and salt.  Set aside.
  3. In a mixing bowl, beat eggs and sugar.  Add in oil, milk, vanilla and bananas.  Mix well.
  4. Gradually add in flour mixture and mix until well combined.
  5. Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted comes out clean.
  6. for frosting:
  7. In a saucepan, cook down banana until it becomes thicken ( about 5 minutes)  Let is cool completely.
  8. In a mixing bowl, beat cream cheese,butter and vanilla until creamy.  Add in cooled banana.   Gradually add in powdered sugar until fluffy.  If desired, add in more powdered sugar to get desired consistency.
