Buttermilk Waffles (freezer friendly!)

This is my dear husband's "Mr Plain"  recipe.  He makes these about every other Sunday.  I don't know what it is about these waffles, but, they are fabulous.  Maybe it's because they are just simple, buttermilk waffles?  Who knows? I just know they are good. Really good.

He actually doubles the recipe below and stashes a good amount of them in the freezer for future meals.  Our waffle maker is round in shape and makes about an 8 in waffle. So, we split them up into 4 smaller waffles triangles and freeze them in a giant Ziploc-type bag.  Then, whenever anybody wants one, they can warm them up in the toaster. Works great.

My kids totally love these and not just for breakfast.  They eat these for lunch, snacks and at times, dinner.

Buttermilk Waffles

Ingredients (6- 8 in waffles)

  • 2 cups flour
  • 2 eggs
  • 1 3/4 cup buttermilk
  • 1/2 cup canola oil, plus additional for waffle maker
  • 1 TBSP sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla

Instructions

Preheat waffle maker and brush with canola oil.

Beat eggs in a bowl until fluffy. Add in remaining ingredients and beat just until smooth.

Pour batter on hot waffle maker. Cook according to manufacturers directions.
