Cookies and Cream Cupcakes with Vanilla Butter Cream Frosting

I've been blogging here on Table for Seven since 2011. Before that, there was a small family blog that I had.  Nothing too flashy, just a way to keep in touch with family far away.  So, let's figure, for a good 6-7 years of blogging experience.  All on the same blogging platform.  Well, it's just been in the last couple weeks that I discovered you can "re-publish" a post from the past.  Who knew?! Not me.  I've always just done a whole new post to show new readers some classic content. Google probably hates me.

So, in turn,today, we are republishing! Woohoo!  

This recipe & post was originally done back in October 2011. For the life of me, I don't know why.  It was a complete and utter failure.  Hence, that is what was shared.  No nice pictures, no update of them being done in the future.  Just a "hey, I suck at making these cupcakes" post.  Approximately 10 people have read it since then.  Yeah, kinda sad.

Here we are, 2015 and we have success and even, a little red tossed in for the holiday spirit. Cupcakes are just perfect for the holidays, aren't they?  These especially. A nice, soft cupcake filled with Oreo cookies and topped off with a lovely vanilla butter cream frosting. So good and soooo much better than my 2011 debacle.   

Recipe side note: this recipe makes you about 18 cupcakes.  So, if you only have a 12 count muffin pan (like me), you will have to bake an additional 6 or so after you first batch of 12.



Staying  with the holiday theme, but, on a complete different note...this will be my last recipe this year.

Starting next week, I'm officially taking two weeks off from blogging. Mr Plain is off work and we are going to (hopefully) spend lots of quality time together.  And by quality time I mean, scraping three layers of wallpaper in the living room, taking out some incredibly ugly shag carpeting and hopefully, finish repairing a wall in the bathroom...fun stuff.

Cookies and Cream Cupcakes with Vanilla Butter Cream Frosting

Ingredients (18 Cupcakes)

  • 2 1/4 cups flour
  • 1 TBSP baking powder
  • 1/2 tsp salt
  • 1 2/3 cups sugar
  • 1 cup milk
  • 1/2 cup butter, softened
  • 2 tsp vanilla
  • 3 egg whites
  • 1 cup crushed Oreo's, plus additional for sprinkling on top
FOR FROSTING
  • 3 cups powder sugar
  • 1/4 cup butter
  • 2 tsp vanilla
  • 2 TBSP milk

Instructions

Preheat oven to 350. Line 12 count muffin pan with cupcake liners or grease well.

In a bowl, whisk together flour, baking powder and salt. Set aside.

In a mixing bowl, beat butter and sugar. Then, add in milk and vanilla. Beat on low speed for 30 seconds. Increase speed, then, add in eggs whites, one a a time and beat for another 2 minutes.

Mix in flour mixture and beat until just combined. Fold in crushed cookie pieces.

Spoon batter into muffin cups, filling approx 2/3 full. Bake 20 to 25 min or until set.

Let cupcakes cool for 5-10 minutes before removing from pan.

Then, let them cool completely before frosting.

FOR FROSTING

Beat frosting ingredients until smooth. Adding/subtracting milk by the tablespoon for desired consistency.
